Ingredients

Main Ingredients
  • 1 lb corned beef Traditionally canned but fresh works too.
  • 2 cups mashed potatoes Adds creaminess; can use leftovers.
  • 1 piece onion Sautéed for sweetness and depth.
  • 1-2 pieces pickles, chopped Must for tangy contrast.
  • to taste g salt and pepper Season to elevate flavors.
  • optional pieces fried eggs Enhances the dish's richness on top.

Method

Preparation
  1. Sauté the chopped onion in a bit of oil over medium heat until it becomes translucent and fragrant, about 5 minutes.
  2. Add the corned beef to the pan, breaking it apart with a spatula and cooking until it starts to brown a little.
  3. Fold in the mashed potatoes, ensuring everything is evenly combined; continue to cook for another 5–7 minutes while stirring.
  4. Mix in the chopped pickles, allowing them to heat through, which will release their vinegar essence into the mix.
  5. Season the mixture with salt and pepper, adjusting to taste.
  6. Serve the Labskaus hot, garnished with a fried egg on top for an extra indulgent touch.

Notes

Use a combination of fresh and canned corned beef for richer flavor. Make sure your mashed potatoes are creamy and seasoned well. Consider adding beetroot juice for color.
