  • 2 cups mashed potatoes Use smooth, not too wet mashed potatoes.
  • 1 cup shredded cheese (cheddar or your choice) Choose cheese that melts well.
  • 1/2 cup breadcrumbs Fresh breadcrumbs are best; dry store crumbs work, too.
  • 1/4 cup chopped green onions Fresh for a bright onion flavor.
  • 1 item egg Acts as a binder for the mixture.
  • to taste Salt and pepper Season according to taste.
  • oil for frying Use a neutral oil with a high smoke point.

Preparation
  1. In a bowl, combine the mashed potatoes, shredded cheese, breadcrumbs, green onions, egg, salt, and pepper. Mix until well combined.
  2. Shape the mixture into small puffs or balls, using a tablespoon or small ice cream scoop for uniform size.
  3. Heat oil in a frying pan over medium heat until shimmering.
Cooking
  1. Fry the puffs until golden brown on all sides, about 3-4 minutes.
  2. Remove from oil and drain on paper towels to absorb excess oil.
Serving
  1. Serve warm as a side dish or snack, optionally garnished with extra green onions.

Notes

Store cooled puffs in an airtight container for up to 3 days. Reheat in an oven or skillet for best texture.
