Method
Make the sauce
- In a bowl mix mayonnaise, ketchup, mustard, relish, vinegar, garlic powder, and a pinch of salt. Stir and chill.
Form patties
- Divide beef into 12 equal pieces. Shape into thin patties slightly wider than buns. Press a small dent in center.
Season
- Sprinkle salt and pepper on both sides of patties.
Cook patties
- Heat a skillet or griddle with butter or oil over medium-high heat. Cook patties 2–3 minutes per side until browned and cooked through.
Add cheese
- Place a slice of cheese on each hot patty for the last 30 seconds so it melts.
Toast buns
- Lightly toast buns on the pan until golden.
Assemble
- Spread sauce on bottom bun, add a patty with cheese, add some chopped onion, a pickle slice, and shredded lettuce. Add a small dab of sauce on the top bun and close.
Serve
- Serve warm on a platter with extra sauce on the side. Add fries or a simple salad.
Notes
Keep patties thin so they cook fast and stay juicy. Chill sauce for 30 minutes for best flavor. Toast buns to prevent sogginess. Sauce can be prepared a day in advance.
