Mini Big Mac Cheeseburgers

Ingredients
  

For the patties
  • 1 lb ground beef (80/20)
  • 12 pieces mini burger buns or slider buns
  • 12 slices small round cheddar or American cheese slices
  • 1 cup shredded iceberg lettuce
  • 12 slices dill pickle slices
  • 1 small onion, finely chopped
For the sauce
  • 1 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tsp sweet pickle relish
  • 1 tsp white vinegar or pickle juice
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 1 tbsp butter or oil for cooking

Method
 

Make the sauce
  1. In a bowl mix mayonnaise, ketchup, mustard, relish, vinegar, garlic powder, and a pinch of salt. Stir and chill.
Form patties
  1. Divide beef into 12 equal pieces. Shape into thin patties slightly wider than buns. Press a small dent in center.
Season
  1. Sprinkle salt and pepper on both sides of patties.
Cook patties
  1. Heat a skillet or griddle with butter or oil over medium-high heat. Cook patties 2–3 minutes per side until browned and cooked through.
Add cheese
  1. Place a slice of cheese on each hot patty for the last 30 seconds so it melts.
Toast buns
  1. Lightly toast buns on the pan until golden.
Assemble
  1. Spread sauce on bottom bun, add a patty with cheese, add some chopped onion, a pickle slice, and shredded lettuce. Add a small dab of sauce on the top bun and close.
Serve
  1. Serve warm on a platter with extra sauce on the side. Add fries or a simple salad.

Notes

Keep patties thin so they cook fast and stay juicy. Chill sauce for 30 minutes for best flavor. Toast buns to prevent sogginess. Sauce can be prepared a day in advance.
