Preparation
- Thoroughly rinse the mussels under cold water, removing any beards and ensuring they are clean. Discard any that do not close when tapped.
Sauté Aromatics
- In a large pot over medium heat, melt the butter. Add the onion and garlic, cooking until softened and fragrant, about 2-3 minutes.
Add the Wine
- Pour in the dry white wine, stirring to combine. Bring to a simmer and let it reduce slightly for about 5 minutes.
Cook the Mussels
- Add the cleaned mussels to the pot, stirring to coat them in the broth. Cover the pot with a lid and allow the mussels to steam for 5-7 minutes until they open up.
Finish with Seasoning
- Once the mussels are open, remove the pot from heat. Season with salt and pepper, and sprinkle with fresh parsley just before serving.
Serve Hot
- Spoon the mussels into bowls, along with plenty of the buttery broth. Accompany with crusty bread to soak up every drop.
Notes
Moules marinières are best enjoyed fresh, but leftovers can be stored in the refrigerator for up to 2 days. Reheat gently on the stove over low heat, adding a splash of water to keep the mussels moist. Avoid using a microwave.
