Meatloaf Ingredients
  • 1.5 lbs ground beef
  • 0.5 cup Italian breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 1 cup mozzarella cheese, cubed Keep cold until needed
  • 1 large egg
  • 0.25 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon Italian seasoning
  • 1 cup marinara sauce (for serving)

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix ground beef, Italian breadcrumbs, Parmesan cheese, egg, parsley, garlic, salt, pepper, and Italian seasoning until just combined.
  3. Shape the meat mixture into a rectangle on parchment paper and place cubed mozzarella in the center. Roll up the meat to encase the cheese.
  4. Place in a greased baking dish and top with marinara sauce.
Baking
  1. Bake for about 1 hour, or until internal temperature reaches 160°F (70°C). Let rest for a few minutes before slicing.

Notes

Keep the mozzarella cubes cold so they do not melt before baking. Do not overmix the meat; mix just until ingredients come together. Use a meat thermometer to ensure safe doneness. Let the loaf rest 5–10 minutes before slicing to keep juices inside.
