- In a mixing bowl, combine the rolled oats, shredded coconut, and chocolate chips. Stir well.
- In a small saucepan over low heat, combine the nut butter, honey (or maple syrup), vanilla extract, and salt. Stir until smooth and melted.
- Pour the nut butter mixture over the dry ingredients and mix until well combined.
- Press the mixture into a lined baking dish evenly and refrigerate for at least 30 minutes to chill.
- Once set, cut into bars or squares and enjoy your treats.
Notes
Store in an airtight container in the fridge for up to 1 week. For longer storage, freeze in a sealed bag for up to 2 months. Thaw in the fridge before serving.
