  • 2 pieces roasted chicken drumsticks Use high-quality chicken for best taste.
  • 1 cup baby potatoes Choose small and firm potatoes.
  • 1 cup lettuce Can use any variety you prefer.
  • 1/2 cup cucumber, sliced
  • 1 piece tomato, chopped
  • 1/4 piece red onion, sliced
  • 1/2 cup feta cheese Fresh feta adds creaminess.
  • 2 tablespoons olive oil Extra virgin olive oil preferred.
  • to taste salt & black pepper Use sparingly to avoid over-seasoning.
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • to taste red chili flakes For added heat.
  • 2 tablespoons fresh parsley For garnish.

Method
 

Preparation
  1. Rub the chicken drumsticks with olive oil, garlic powder, paprika, salt, and black pepper until well coated.
  2. Roast or boil the baby potatoes until golden and tender, approximately 15-20 minutes.
  3. In a bowl, toss together the lettuce, cucumber, tomato, and red onion until well mixed.
  4. In a large serving bowl, combine roasted chicken, potatoes, and salad. Crumble feta cheese on top.
  5. Sprinkle parsley, red chili flakes, and cracked pepper before serving.

Notes

Store the bowl in an airtight container in the fridge for 3 to 4 days. For longer storage, freeze for up to 2 months. Reheat before serving for best texture. For meal prep, separate salad greens until ready to consume.
