- Rub the chicken drumsticks with olive oil, garlic powder, paprika, salt, and black pepper until well coated.
- Roast or boil the baby potatoes until golden and tender, approximately 15-20 minutes.
- In a bowl, toss together the lettuce, cucumber, tomato, and red onion until well mixed.
- In a large serving bowl, combine roasted chicken, potatoes, and salad. Crumble feta cheese on top.
- Sprinkle parsley, red chili flakes, and cracked pepper before serving.
Notes
Store the bowl in an airtight container in the fridge for 3 to 4 days. For longer storage, freeze for up to 2 months. Reheat before serving for best texture. For meal prep, separate salad greens until ready to consume.
