Dough Ingredients
  • 2 cups all-purpose flour A strong flour ensures great structure.
  • 1/2 cup unsalted butter Acts as the base for flakiness.

  • 1 packet active dry yeast Helps the dough rise.
  • 1/2 cup milk Helps activate the yeast.

Method
 

Preparation
  1. In a bowl, combine the flour, sugar, and salt.
  2. In a separate bowl, warm the milk to about 110°F and dissolve the yeast in it. Let the mixture foam for about 5 minutes.
  3. Add the yeast mixture and the egg to the dry ingredients. Mix until a dough forms.
Kneading and Rising
  1. On a lightly floured surface, knead the dough for about 5-7 minutes until it is smooth and elastic.
  2. Cover the dough with a damp cloth and let it rise in a warm place for 1 hour, or until doubled in size.
Incorporating the Butter
  1. Roll the dough into a rectangle and place the cold butter in the center.
  2. Fold the sides over the butter to encase it completely.
  3. Roll the dough out to a larger rectangle, then fold it into thirds like a letter to create layers.
Chilling and Rolling
  1. Wrap the dough in plastic wrap and refrigerate it for 30 minutes.
  2. Repeat the rolling and folding process two more times, chilling the dough in between.
Shaping and Baking
  1. Preheat your oven to 400°F.
  2. Roll the dough into a large rectangle again and cut it into smaller rectangles (approximately 4 x 6 inches).
  3. Place a piece of chocolate on one edge of each rectangle and roll it up tightly.
  4. Place the rolled pastries seam-side down on a baking sheet lined with parchment paper.
  5. Let them rise for 30 minutes. Brush the tops with an egg wash and bake for about 15-20 minutes, or until golden brown.
Cooling
  1. Let your pain au chocolat cool slightly on a wire rack before indulging.

Notes

Use cold ingredients for best results. Don’t rush the rising process, as it's key for texture and flavor. Monitor your oven temperature closely to avoid over-browning.
