Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion and garlic, sauté until softened.
  3. Pour in the vegetable broth and diced tomatoes, and bring to a simmer.
  4. Add the tortellini and cook according to package instructions.
  5. Stir in heavy cream and Parmesan cheese, mixing until smooth.
  6. Season with salt and pepper to taste.

Notes

For best results, use good quality Parmesan cheese and heat gently after adding cream to prevent splitting. This soup can be made a day ahead and reheated gently.
