  • 2 cups graham cracker crumbs
  • 1/4 cup melted butter
Cheesecake Filling Ingredients
  • 24 oz cream cheese, room temperature Ensure cream cheese is at room temperature to avoid lumps.
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 tsp cinnamon
  • 3 cups sliced peaches Fresh or canned peaches can be used.

Method
 

Prepare Crust
  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter until well mixed.
  3. Press this mixture into the bottom of a springform pan to create a delightful crust.
Prepare Cheesecake Filling
  1. In another large bowl, beat the cream cheese and sugar together until smooth and creamy.
  2. Add the eggs one at a time, mixing well after each addition.
  3. Stir in the vanilla extract and sour cream until everything is well incorporated.
  4. Gently fold in the sliced peaches and cinnamon, ensuring the fruit is evenly distributed throughout the cheesecake mixture.
Bake
  1. Carefully pour the peach mixture over the prepared crust in your springform pan.
  2. Bake for about 50-60 minutes, or until the center is set and the edges turn a lovely golden brown.
  3. Once baked, remove from the oven and let it cool completely before refrigerating for at least 4 hours.
Serve
