Preparation
- Clean the pigeon thoroughly and pat it dry with paper towels. Season it generously with salt and pepper.
- In a Dutch oven or heavy skillet, heat the olive oil over medium-high heat. Sear the pigeon on all sides until browned, about 5 minutes, then remove and set aside.
Cooking
- In the same pot, add the chopped onion and garlic. Cook until softened, approximately 3-4 minutes, scraping up any browned bits from the bottom.
- Pour in the chicken or vegetable stock, then return the pigeon to the pot. Cover and simmer on low heat for about 45 minutes, or until the meat is tender.
- Stir in the fresh peas during the last 10 minutes of cooking to ensure they stay bright and vibrant.
Serving
- Once the pigeon is cooked and the peas are tender, serve the dish immediately, garnished with some fresh herbs if desired.
Notes
For best results, allow the pigeon to rest after cooking to let the juices redistribute. Fresh peas are preferred for their sweetness; frozen can be a substitute. Adding a splash of white wine can enhance the flavor.
