Ingredients
  

Cookie Dough
  • 1 cup Butter, unsalted Softened
  • 1 cup Granulated sugar
  • 1 large Egg
  • 1 tsp Vanilla extract
  • 2 cups All purpose flour
  • 1 tsp Baking soda
  • 1/2 tsp Salt
Topping
  • 1 can Pineapple rings, canned Drain and pat dry
  • 2 tbsp Sugar For caramelizing

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing well.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  6. Drain the pineapple rings and pat dry with a paper towel.
Caramelizing & Baking
  1. In a small pan, melt the 2 tablespoons of sugar until it caramelizes slightly.
  2. Place the caramelized sugar at the bottom of your cookie cups or baking dish.
  3. Arrange pineapple rings over the melted sugar.
  4. Drop spoonfuls of the cookie dough over the pineapple.
  5. Bake for 12-15 minutes or until golden brown.
  6. Allow to cool slightly before inverting the cookies onto a serving plate.

Notes

Serve warm or at room temperature. These cookies also pair well with tea or coffee. For a treat, add ice cream or whipped cream on the side.
