For the filling
  • 24 oz cream cheese, softened Use room temperature for best results.
  • 1 cup butterscotch chips, melted Melt slowly to keep them smooth.
  • 3 tbsp butterscotch pudding mix
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs Add one at a time to avoid overmixing.
For the crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cup butter, melted

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a large mixing bowl, beat the softened cream cheese until smooth.
  3. Mix in the melted butterscotch chips, pudding mix, and sugar until well combined.
  4. Add vanilla extract and stir until incorporated.
  5. Add eggs one at a time, mixing well after each addition.
  6. Combine graham cracker crumbs with melted butter, then press into the bottom of a springform pan to create the crust.
  7. Pour the cream cheese mixture over the crust and spread evenly.
Baking
  1. Bake for 55-60 minutes, or until set.
  2. Let cool, then refrigerate for at least 4 hours before serving.
