Ingredients
  

Potatoes
  • 1.5 lbs Baby red potatoes Opt for fresh for best flavor and texture.
Seasonings
  • 3 cloves Garlic Minced for best flavor.
  • 2 tbsp Olive oil Can substitute with avocado oil for a different flavor.
  • 1 tbsp White wine vinegar Add for flavor before serving. Can substitute with lemon juice.
  • 1 tsp Salt Adjust according to taste.
  • 1/2 tsp Pepper Black pepper recommended.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Wash and halve the baby red potatoes, removing any blemishes.
  3. In a large bowl, toss the halved potatoes with olive oil, minced garlic, salt, and pepper until well coated.
Cooking
  1. Spread the potatoes in a single layer on a baking sheet.
  2. Roast in the preheated oven for 30-35 minutes, flipping halfway through. Look for a golden brown color and fork-tender texture.
Serving
  1. Once done, remove from oven and drizzle with white wine vinegar before serving.

Notes

For best texture, ensure potatoes are similar in size. Can store leftovers in an airtight container for up to 3-4 days in the fridge.
