  • 1-2 tablespoons olive oil Enough to coat, not drown.

Preparation
  1. Preheat oven to 425°F (220°C).
  2. Peel sweet potatoes if desired, then cut into 3/4 to 1-inch cubes.
  3. In a large bowl, toss the sweet potato cubes with olive oil, salt, pepper, garlic powder, and smoked paprika until well coated.
  4. Spread the sweet potato cubes in a single layer on a sheet pan. Make sure they are not overcrowded to avoid steaming.
Cooking
  1. Roast in the preheated oven for 25 to 35 minutes, flipping once around the 15-minute mark, until golden brown and tender.

Notes

For variations, consider adding spices like cinnamon for a sweet flavor, or chili powder for a spicy kick. Serve with proteins or in bowls with greens and grains for a complete meal.
