Ingredients
  

For the crust
  • 200 g chocolate cookies they provide an essential chocolatey crunch

Method
 

Preparation
  1. In a food processor, crush the chocolate cookies into fine crumbs.
  2. Melt the butter and mix it with the crumbs until well combined.
  3. Press this mixture firmly into the bottom of a springform pan to create the crust.
Baking the crust
  1. Preheat your oven to 180°C (350°F) and bake the crust for about 10 minutes.
Making the filling
  1. In a large mixing bowl, beat the cream cheese until smooth.
  2. Gradually add sugar, mixing until combined.
  3. Add the eggs one at a time, mixing thoroughly after each addition.
  4. Add the vanilla extract and combine.
Melting chocolate
  1. Gently melt the dark chocolate in a microwave or double boiler.
  2. Allow it to cool slightly before folding it into the cream cheese mixture.
Combining layers and baking
  1. Pour the cream cheese mixture over the baked crust, smoothing the top with a spatula.
  2. Bake the entire cake for about 50-60 minutes until the edges are set but the center has a slight jiggle.
  3. Remove from the oven and let it cool at room temperature before refrigerating for at least four hours or overnight to set.
Serving
  1. Once chilled, slice the cake and enjoy the decadent layers of chocolate and cream!

Notes

Use full-fat cream cheese for a rich and silky texture. Ensure that all ingredients are at room temperature before mixing; this prevents lumps in the filling. If you like a hint of tang, consider adding a tablespoon of sour cream to the filling for extra creaminess.
