  • 3 cups Chicken or vegetable broth Homemade is best, but store-bought works too.
  • 2 medium Carrots Adds sweetness and color.
  • 1 Bay leaf Infuses a subtle herbal note.

Preparation
  1. In a large pot, heat a drizzle of oil over medium heat. Add the diced onion and minced garlic, cooking until softened and fragrant, about 3-4 minutes.
  2. Push the onions to one side and add the sausages to the pot. Brown them lightly on all sides, about 5-7 minutes.
  3. Pour in the lentils, diced carrots, and bay leaf. Stir everything to combine, allowing the lentils to soak up the flavors for about 2 minutes.
  4. Add the broth to the pot, ensuring the lentils are fully submerged. Bring the mixture to a gentle boil, then reduce the heat to low and cover. Let it simmer for 30-35 minutes or until the lentils are tender.
  5. Once cooked, discard the bay leaf and season with salt and pepper. Serve hot, possibly alongside crusty bread for dipping.

Notes

Rinse lentils before cooking to remove any debris. For extra flavor, consider adding a splash of white wine while cooking the onions and garlic. You can add red pepper flakes for heat and let the dish sit before serving to meld flavors.
