Ingredients

Chicken and coating
  • 2 pounds chicken drumsticks Look for fresh, plump pieces with smooth skin.
  • 1 cup all-purpose flour Can substitute with gluten-free flour.
  • 1/2 cup buttermilk Substitute with almond milk plus vinegar for dairy-free option.
Spices
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary

Method

Preparation
  1. Preheat your oven to 425°F (220°C) or heat oil in a deep fryer.
  2. In a bowl, combine garlic powder, onion powder, paprika, salt, black pepper, thyme, and rosemary.
  3. Pour buttermilk into another bowl and submerge the drumsticks.
  4. In a shallow dish, mix the flour with the spice blend.
  5. Remove each chicken piece from the buttermilk, allowing excess to drip, then dredge in the seasoned flour.
Cooking
  1. Arrange the coated drumsticks on a baking sheet if baking, or gently place them in hot oil if frying.
  2. Bake for about 30-35 minutes or fry for about 10-12 minutes until crispy and golden brown.
  3. Let the cooked drumsticks rest on a paper towel-lined plate.

Notes

For extra crispy texture, let the dredged chicken rest for 10-15 minutes before cooking. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
