Ingredients
  

For the Chicken
  • 4 pieces chicken drumsticks Choose drumsticks with a nice layer of fat for flavor.
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 tbsp honey Swap for maple syrup for a vegan option.
  • 1 tbsp soy sauce Coconut aminos can be used for a gluten-free option.
For the Vegetables
  • 2 medium zucchinis, sliced thick Choose firm and shiny zucchinis.
  • 1/2 tsp garlic powder (for zucchini)
  • to taste Salt & pepper (for zucchini)
  • 2 cups spinach or kale
  • 2 cloves garlic, sliced
  • 1 tbsp olive oil (for greens)
  • pinch salt
  • pinch black pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix olive oil, paprika, smoked paprika, garlic powder, onion powder, honey, soy sauce, salt, and pepper.
  3. Coat the chicken drumsticks in the marinade and let them sit for 10-15 minutes.
Cooking
  1. Place drumsticks on a baking tray lined with parchment paper and bake for 35-40 minutes until golden brown.
  2. Meanwhile, sauté the zucchini in olive oil with garlic powder, salt, and pepper for 4-5 minutes.
  3. In another pan, heat olive oil and cook sliced garlic until fragrant, then add spinach or kale and cook until wilted.
Serving
  1. Serve the chicken drumsticks alongside the sautéed zucchini and garlic greens.

Notes

For deeper flavor, marinate the chicken overnight. Consider broiling the drumsticks for extra crispiness at the end. Store leftovers in the fridge for up to 3 days.
