Ingredients
  

For the Chicken
  • 4 pieces chicken drumsticks Look for plump, meaty pieces with a pink hue.
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt & black pepper To taste
For the Veggie Pasta
  • 2 cups rigatoni or short pasta Opt for whole grain or gluten-free versions if necessary.
  • 1/2 cup mixed vegetables (peas, carrots, corn)
  • 1 cup cheddar cheese, shredded Can substitute with dairy-free cheese.
  • 2 tbsp butter Can be swapped for olive oil.
  • 2 cloves garlic, minced
For the Slaw
  • 2 cups lettuce
  • 1/2 cup carrot, julienned
  • 1/4 cup red onion, sliced
  • 2 tbsp mayonnaise or creamy dressing
  • 1 tbsp chopped chives

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the drumsticks with paprika, smoked paprika, garlic powder, salt, and pepper.
Cooking the Chicken
  1. Place the chicken on a baking sheet and bake for 35-40 minutes, or until golden brown and juices run clear.
Cooking the Pasta
  1. Meanwhile, bring a pot of salted water to a boil for the pasta. Add the rigatoni and cook until just al dente.
  2. Strain the pasta, then stir in butter, mixed veggies, and cheddar until melted and creamy.
Making the Slaw
  1. In a bowl, toss together the lettuce, julienned carrot, sliced red onion, and creamy dressing.
Serving
  1. Plate the cheesy pasta alongside the baked chicken and a generous serving of slaw. Garnish with chopped chives.

Notes

This dish can be stored in the refrigerator for up to three days and frozen for up to three months. To enhance the flavor, marinate the drumsticks in yogurt and spices for a few hours before baking.
