For the Potatoes
  • 4 medium potatoes, cut into wedges Choose firm, unblemished potatoes.
  • 2 tbsp olive oil For tossing the wedges.
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Coleslaw
  • 2 cups coleslaw mix (cabbage + carrot)
  • 2 tbsp mayonnaise Can substitute with a light vinaigrette.
  • 1 tbsp apple cider vinegar Use cautiously to avoid overpowering flavors.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Coat the chicken drumsticks in olive oil, ensuring they are completely covered.
  3. Sprinkle on garlic, paprika, garlic powder, onion powder, parsley, salt, pepper, and chili flakes. Massage the spices into the chicken for even flavor.
  4. In a mixing bowl, toss the potato wedges with olive oil, salt, pepper, and any additional herbs you prefer.
Cooking
  1. Place the chicken and potatoes on a baking sheet in a single layer. Roast in the preheated oven for about 35-40 minutes.
  2. While the chicken and potatoes roast, prepare the coleslaw by combining the coleslaw mix, mayonnaise, and apple cider vinegar in a bowl. Stir until everything is coated to your liking.
Serving
  1. Once the chicken is cooked through and golden, remove it from the oven. Plate the chicken drumsticks, potato wedges, and coleslaw.
  2. Garnish with fresh parsley or a sprinkle of paprika for color, and enjoy!
