Ingredients
  

For the marinade
  • 1 lb Chicken breasts or thighs, Boneless Skinless
  • 2 tbsp Garlic
  • 1 tbsp Ginger
  • 1 tbsp Soy sauce
  • 1 tbsp Chili garlic sauce
  • 1 tbsp Sugar or honey
  • 1/2 tsp Black pepper
For the sauce
  • 1/2 cup Tomato ketchup
  • 1 piece Egg white Optional, helps sauce cling
  • 1/4 cup Cornstarch For thickening
  • 1/4 cup Water For slurry
  • 1/2 tsp Salt
  • 1 tbsp Vinegar
  • 1 tbsp Sesame oil
  • 2 Red chilies or crushed red pepper flakes, Dried Adjust to heat preference
For cooking
  • 1 tbsp Vegetable oil For frying
  • 1 tbsp Toasted sesame seeds For garnish
  • 1 Thin strips Onion or bell pepper, Fried For added flavor

Method
 

Marinating
  1. In a bowl, marinate chicken with soy sauce, chili garlic sauce, sugar or honey, and black pepper for 15 minutes.
Cooking
  1. Heat vegetable oil in a pan, and sauté garlic and ginger until fragrant.
  2. Add the marinated chicken and stir-fry until cooked through.
  3. Mix cornstarch with water to form a slurry and add to the pan.
  4. Stir in ketchup, egg white, and vegetables, cooking until the sauce thickens.
  5. Add sesame oil, and vinegar, and adjust seasoning with salt and red chilies.
  6. Garnish with sesame seeds and green onions before serving.

Notes

Cut chicken into even pieces for uniform cooking. Use high heat for a slight char on the chicken to enhance flavor. Add cornstarch slurry slowly to control sauce thickness. For a smoother sauce, whisk the egg white lightly before adding.
