Ingredients
  

Meatball Mixture
  • 1 lb Ground beef
  • 1/4 cup Cilantro, fresh
  • 1 clove Garlic minced
  • 1 piece Jalapeno pepper diced
  • 1 can Mexican-style tomatoes with green chilies
  • 1/2 cup Onion chopped
  • 1 piece Egg
  • 1 tsp Chili powder
  • 1/2 tsp Paprika, smoked
  • to taste Salt and pepper
  • 1 tbsp Olive oil
  • 1 tsp Cumin, ground
Filling
  • 1/2 cup Tortilla chips crushed
  • 1 cup Cheddar cheese shredded
Serving
  • 1 piece Lime Fresh wedges

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add chopped onion, minced garlic, and diced jalapeno. Sauté until softened.
  3. In a bowl, combine ground beef, cilantro, Mexican-style tomatoes, egg, chili powder, paprika, cumin, salt, and pepper. Add the sautéed mixture and blend well.
  4. Crush tortilla chips and fold them into the meat mixture with shredded cheddar cheese.
  5. Form the mixture into balls and place on a baking sheet.
  6. Bake in the preheated oven for 25-30 minutes or until cooked through and golden brown.
Serving
  1. Serve warm with lime wedges. Offer salsa, sour cream, or guacamole for dipping.

Notes

Do not overmix the meat or the balls can become tough. Use a cookie scoop to make balls the same size for even baking. Crush chips by hand so some chunks remain for texture. For more heat, leave seeds in the jalapeno or add hot sauce. To keep balls moist, do not overbake; use a meat thermometer to check for 160°F (71°C).
