Ingredients
  

For the Chicken
  • 6 pieces Chicken thighs, bone-in and skin-on Use skin-on for extra crispiness.
  • 1 cup Apple cider Can substitute with apple juice.
  • 1 tbsp Dijon mustard
  • 2 tbsp Honey Adds sweetness.
  • 2 cloves Garlic Minced.
  • 1/4 tsp Celery seeds
  • 1 tbsp Cooking oil For searing.
For the Slaw
  • 1 medium Apple Diced, use a tart variety.
  • 2 cups Green cabbage Shredded.
  • 1 cup Carrots Shredded.
  • 2 tbsp fresh Parsley or chives Chopped.
  • 2 tbsp Apple cider vinegar For dressing the slaw.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine apple cider, honey, Dijon mustard, garlic, celery seeds, salt, and pepper.
  3. Place chicken thighs in the bowl and coat them well with the marinade.
  4. Heat cooking oil in a large oven-safe skillet over medium-high heat.
Cooking
  1. Sear the chicken thighs skin-side down until golden brown, about 5-7 minutes.
  2. Flip the chicken and pour the apple cider mixture over it.
  3. Transfer the skillet to the oven and roast for 20-25 minutes or until the chicken is cooked through.
Preparing the Slaw
  1. While the chicken roasts, mix shredded cabbage, carrots, diced apple, parsley or chives, and apple cider vinegar in a bowl.
  2. Serve the hot chicken with a scoop of the crisp slaw on the side.

Notes

Pat the chicken skin dry to ensure it sears well. Do not crowd the pan when searing; work in batches if needed. For extra crispiness, save some sauce to spoon over the chicken when serving.
