Preparation
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine apple cider, honey, Dijon mustard, garlic, celery seeds, salt, and pepper.
- Place chicken thighs in the bowl and coat them well with the marinade.
- Heat cooking oil in a large oven-safe skillet over medium-high heat.
Cooking
- Sear the chicken thighs skin-side down until golden brown, about 5-7 minutes.
- Flip the chicken and pour the apple cider mixture over it.
- Transfer the skillet to the oven and roast for 20-25 minutes or until the chicken is cooked through.
Preparing the Slaw
- While the chicken roasts, mix shredded cabbage, carrots, diced apple, parsley or chives, and apple cider vinegar in a bowl.
- Serve the hot chicken with a scoop of the crisp slaw on the side.
Notes
Pat the chicken skin dry to ensure it sears well. Do not crowd the pan when searing; work in batches if needed. For extra crispiness, save some sauce to spoon over the chicken when serving.
