Ingredients
  

For the Ribs
  • 1 rack pork ribs Choose a well-marbled rack for more flavor.
  • 1/3 cup BBQ sauce Feel free to use your favorite brand.
  • 1 tbsp olive oil For roasting the potatoes.
  • 1 tsp garlic powder Enhances the seasoning of the ribs.
  • Salt Salt To taste.
  • Black pepper Black pepper To taste.
For the Sides
  • 1 cup baby potatoes Roasted until golden and crispy.
  • 1/2 cucumber, sliced For the fresh salad.
  • 1/2 cup tomatoes, sliced Add sweetness to the salad.
  • 1/4 cup onion, sliced Provides crunch in the salad.

Method
 

Preparation
  1. Rub the ribs with salt, pepper, and garlic powder to enhance the flavor.
  2. Toss the baby potatoes in olive oil and season with salt and pepper.
  3. Mix the sliced cucumber, tomatoes, and onion to create a fresh salad.
Cooking
  1. Bake or grill the ribs at a low temperature for 2-3 hours.
  2. Brush the ribs with BBQ sauce for the sticky finish and cook for an additional 15-30 minutes.
  3. Roast the baby potatoes until they are golden and crispy, about 30-40 minutes.
Serving
  1. Arrange the ribs prominently on a large platter and add the roasted baby potatoes beside them.
  2. Serve the fresh salad in a separate bowl or on the plate.

Notes

Make sure to season the ribs well and let them marinate for at least an hour before cooking. For extra stickiness, brush on more BBQ sauce during the last few minutes of cooking. Leftovers can be stored in airtight containers; ribs for up to 3 days, and potatoes for up to 2 days.
