Ingredients
  

For the Chicken Skewers
  • 2 lbs boneless chicken thighs, cut into chunks Look for chicken thighs that are firm and pink.
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp salt Avoid using too much to prevent tough chicken.
  • 1/2 tsp black pepper
  • 1/2 cup BBQ sauce Consider gluten-free for dietary needs.
  • 2 tbsp honey
For the Rice and Fries
  • 1 cup white rice Can substitute with quinoa or cauliflower rice.
  • 2 cups water
  • 1/4 tsp salt
  • 4 large potatoes, cut into thick fries Soaking helps remove excess starch for crispiness.
  • 2 tbsp vegetable oil
  • 1 tsp salt
For the Salad
  • 2 cups romaine lettuce Should be crisp.
  • 1 cucumber sliced Freshness adds balance to the dish.
  • 6 cherry tomatoes halved
Condiments
  • Ketchup
  • Garlic herb mayo sauce
Garnish
  • 1 tbsp chopped parsley For garnish.
  • 2 tbsp finely diced red onion

Method
 

Marinate the Chicken
  1. In a large bowl, combine the chicken chunks with olive oil, garlic powder, paprika, onion powder, salt, and black pepper. Let it marinate for at least 30 minutes.
Prepare the Skewers
  1. Thread the marinated chicken onto skewers. Preheat your grill to medium-high heat. Grill the skewers for 10-12 minutes, turning occasionally.
  2. In the last few minutes, brush them with honey and BBQ sauce for a sticky finish.
Cook the Rice & Fries
  1. In a saucepan, bring water with 1/4 tsp salt to a boil. Add the rice and simmer until fluffy.
  2. For the fries, toss with vegetable oil and salt, then bake or air-fry at 425°F until golden.
Prepare the Fresh Salad
  1. Layer fresh romaine lettuce, cucumber slices, and cherry tomatoes in a bowl.
Assemble & Serve
  1. In a large bowl, layer rice, fries, salad, and chicken skewers. Serve with condiments on the side.

Notes

Store in the fridge for 3-4 days; freeze for up to three months. Reheat in the oven for best results.
