Method
Marinate the Chicken
- In a large bowl, combine the chicken chunks with olive oil, garlic powder, paprika, onion powder, salt, and black pepper. Let it marinate for at least 30 minutes.
Prepare the Skewers
- Thread the marinated chicken onto skewers. Preheat your grill to medium-high heat. Grill the skewers for 10-12 minutes, turning occasionally.
- In the last few minutes, brush them with honey and BBQ sauce for a sticky finish.
Cook the Rice & Fries
- In a saucepan, bring water with 1/4 tsp salt to a boil. Add the rice and simmer until fluffy.
- For the fries, toss with vegetable oil and salt, then bake or air-fry at 425°F until golden.
Prepare the Fresh Salad
- Layer fresh romaine lettuce, cucumber slices, and cherry tomatoes in a bowl.
Assemble & Serve
- In a large bowl, layer rice, fries, salad, and chicken skewers. Serve with condiments on the side.
Notes
Store in the fridge for 3-4 days; freeze for up to three months. Reheat in the oven for best results.
