  • 1/4 cup Greek yogurt Optional; can be used to reduce calories.
  • 1 tablespoon lime juice Freshly squeezed lime juice is preferable.

Method
 

Preparation
  1. Cut the avocados in half and remove the pit, making sure to keep the flesh intact.
  2. In a bowl, combine the shredded rotisserie chicken, mayonnaise, Greek yogurt, lime juice, salt, and pepper. Stir gently without breaking the chicken.
Assembly
  1. Spoon the chicken salad into each avocado half generously.
  2. Top with diced tomatoes, cilantro, or green onions if desired.
Serving
  1. Serve immediately on a colorful plate or large platter.

Notes

Best enjoyed fresh but can be stored in the fridge for up to 1 day. For prep, keep the filling separate until ready to serve. Consider using vegan alternatives for a lighter version.
