For the Cake
  • 2 medium Granny Smith apples Use firm, tart apples.
  • 3 pieces Eggs
  • 1.5 tsp Baking powder
  • 0.5 tsp Baking soda
  • 1.33 cup Brown sugar, light packed
  • 1 tsp Cinnamon
  • 2.75 cup Flour
  • 1.5 cup Granulated sugar
  • 0.75 tsp Salt
  • 2 tsp Vanilla extract
  • 1 cup Pecans Chop evenly for best texture.
  • 2 tbsp Apple cider
  • 1.125 cup Butter, unsalted Softened for easier mixing.
  • 1 cup Sour cream Can substitute with plain yogurt.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, peel and slice the Granny Smith apples and toss them with apple cider. Set aside.
  3. In another bowl, mix the flour, baking powder, baking soda, salt, cinnamon, and brown sugar together.
  4. In a separate bowl, cream the butter and granulated sugar until light and fluffy. Add the eggs and vanilla extract, mixing until well combined.
  5. Gradually add the dry ingredients to the wet mixture, alternating with sour cream, and mix until just combined.
  6. Fold in the sliced apples and pecans.
  7. Pour the batter into the prepared baking pan and smooth the top.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow it to cool in the pan before serving.

Notes

Serve slices warm on their own or with a scoop of vanilla ice cream. For best taste, warm slices slightly before serving.
