Ingredients
  

Tart Shell
  • 1 piece pre-baked tart shell using a homemade or store-bought shell saves time
Filling
  • 2 cups fresh strawberries look for ripe berries; they should be fragrant and firm
  • 1 cup heavy cream for a rich, whipped topping
  • 1 cup milk preferably whole milk for creaminess
  • 1/2 cup granulated sugar adds sweetness to the pastry cream
  • 4 large egg yolks for a rich and smooth pastry cream
  • 1/4 cup cornstarch to thicken the pastry cream
  • 1 teaspoon vanilla extract for flavor depth
  • Optional mint leaves or edible flowers for garnish

Method
 

Prepare the pastry cream
  1. In a saucepan, combine the milk and half the sugar. Heat over medium until it's almost boiling.
  2. In a separate bowl, whisk egg yolks with cornstarch and the remaining sugar until smooth.
  3. Slowly add the hot milk to the egg mixture, whisking constantly to avoid curdling.
  4. Return this mixture to the saucepan and cook over low heat until thickened, about 5 minutes.
  5. Stir in the vanilla extract. Transfer to a bowl, cover with plastic wrap, and let it cool to room temperature.
Wash and slice strawberries
  1. Rinse the strawberries under cold water, then pat them dry with a clean towel.
  2. Remove the stems and cut the strawberries into halves or quarters, depending on size.
Assemble the tart
  1. Once the pastry cream is fully chilled, whip the heavy cream until stiff peaks form.
  2. Gently fold the whipped cream into the cooled pastry cream until combined.
  3. Spread this mixture evenly into the pre-baked tart shell.
Arrange the strawberries
  1. Place the sliced strawberries on top of the pastry cream, starting from the outer edge and working inward for a visually appealing presentation.
Chill and serve
  1. Refrigerate the tart for at least 2 hours to set.
  2. Before serving, add a light glaze or preserve on top if desired.

Notes

Use fresh, in-season strawberries for the best flavor. Ensure your tart shell is fully baked and cooled before adding the pastry cream to prevent sogginess.
