Ingredients

Main Ingredients
  • 1 cup Soy sauce Use low sodium for more control.
  • 1 cup Water
  • 1/2 cup Brown sugar Or honey or maple syrup.
  • 2 cloves Garlic, minced Fresh is best.
  • 2 teaspoons Ginger, grated Fresh is preferred.
  • 1 tablespoon Cornstarch For thickening the sauce.
  • 1 tablespoon Rice vinegar (optional) For additional tang.
  • 1 teaspoon Sesame oil (optional) For extra depth.

Method

Preparation
  1. In a small saucepan, whisk together soy sauce, water, brown sugar, garlic, ginger, and rice vinegar if using.
  2. Bring the mixture to a gentle simmer over medium heat, stirring for 2 to 3 minutes until the sugar fully dissolves.
  3. In a small cup, stir cornstarch with a tablespoon of cold water until smooth. Pour into the simmering sauce while whisking until it turns glossy and thick, then remove from heat.

Notes

Store in a clean jar in the fridge for 7-10 days, or freeze in small portions. If the sauce thickens when cold, reheat and add a splash of water to make it pourable.
