Preparation
- Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain, cool slightly, peel and cut into cubes.
- In a large skillet, heat 1 tablespoon of oil over medium-high heat. Add the beef seasoned with salt and pepper, and cook until browned on all sides, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add another tablespoon of oil if needed and sauté the sliced onions until soft and translucent, about 5 minutes.
Cooking
- Add the cubed potatoes to the skillet and stir in the cooked beef. Mix everything well, pressing gently into the pan. Cook undisturbed for about 5 minutes until the bottom is crispy.
- Flip the mixture using a large spatula to get the other side crispy. Cook for an additional 5-7 minutes, adding more oil if necessary.
Serving
- Once crispy and golden, remove from heat and garnish with fresh herbs. Serve hot with pickles or sour cream.
Notes
For best results, let leftover roasted beef rest before slicing. Sauté garlic with onions for extra flavor. Don't rush the browning process for depth of flavor.
