Preparation
  1. Preheat your oven to 375°F (190°C) and grease your financier molds or a mini muffin tin.
  2. Brown the butter in a saucepan over medium heat. Watch closely as it foams to avoid burning; it should have a nutty aroma and a light brown color. Remove from heat and let it cool slightly.
  3. In a mixing bowl, combine the almond flour, all-purpose flour, powdered sugar, and salt. Mix well to evenly distribute the dry ingredients.
  4. Add the egg whites to the dry mixture and stir until just combined. Avoid whisking too vigorously to maintain some air in the batter.
  5. Pour in the brown butter and vanilla extract, gently folding until incorporated. The batter will be rich and slightly thick.
  6. Spoon the batter into the prepared molds, filling them about two-thirds full to allow for rising.
Baking
  1. Bake for 12-15 minutes, or until the financiers are golden brown on top and a toothpick inserted comes out clean.
  2. Let them cool briefly in the pan before transferring to a wire rack to cool completely.

Notes

Use fresh almond flour for the best flavor. Don’t rush the browning of the butter; it’s crucial for flavor. Keep an eye on your cakes while baking to avoid over-baking.
