Preparation
  1. Preheat the oven to 425°F (220°C). Grease four custard cups or ramekins heavily with butter and dust with cocoa powder.
  2. In a microwave-safe bowl, combine the chopped dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring until completely melted and smooth.
  3. In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until pale and fluffy.
  4. Gradually pour the melted chocolate mixture into the egg mixture, folding gently to combine without deflating the eggs.
  5. Sift in the flour and a pinch of salt, folding just until incorporated.
  6. Divide the batter evenly among the prepared cups, filling them about ¾ full.
Cooking
  1. Place the ramekins on a baking tray and bake for 12-14 minutes. The edges should be firm, but the center will still jiggle slightly.
  2. Remove from the oven and let them cool for 1 minute before carefully inverting each cake onto dessert plates.
  3. Allow them to sit for another minute before lifting the ramekins off.

Quality matters: Always use high-quality chocolate, as it significantly impacts the flavor of the cake. Room temperature eggs whip better for a fluffier texture.
