Preparation
  1. Start by washing and chopping the eggplant, zucchini, bell pepper, and onion into even-sized pieces.
  2. In a large, heavy-bottomed pan, heat the olive oil over medium heat. Add the onion and sauté until it's translucent and fragrant, about 5 minutes.
  3. Next, add the garlic and bell pepper, and cook for an additional 2-3 minutes until the bell pepper softens.
  4. Toss in the eggplant and zucchini, stirring well to combine. Sauté for about 8-10 minutes until the vegetables begin to soften.
  5. Add the chopped tomatoes, thyme, salt, and pepper. Allow the mixture to simmer uncovered on low heat for about 30 minutes, stirring occasionally.
  6. Taste and adjust seasoning as necessary.
Serving
  1. Serve hot as a main dish or let it cool and serve it as a side or salad at room temperature.

Notes

Ensure vegetables are fresh for best flavor. Don’t rush sautéing to allow vegetables to caramelize. Consider adding fresh herbs just before serving for added flavor.
