For the Dough
  • 1 cup water The base for the dough
  • 0.5 cup unsalted butter Adds richness and flavor
  • 1 cup all-purpose flour Creates the structure
  • 4 large eggs Provides lift and moisture
  • 1 cup grated Gruyère cheese The heart of the flavor
  • to taste salt Enhances the overall taste
  • freshly ground pepper or herbs Optional for extra flavor

Method
 

Preparation
  1. In a medium saucepan, combine water and butter. Heat over medium until the butter melts.
  2. Add the flour and salt, stirring vigorously until the mixture forms a cohesive ball that comes away from the sides of the pan.
  3. Remove the dough from the heat and let it sit for about 5 minutes to cool slightly.
  4. Add the eggs one at a time, vigorously mixing them into the dough until fully incorporated after each addition.
  5. Stir in the grated Gruyère cheese until evenly distributed throughout the dough.
  6. Using a pastry bag, pipe small mounds (about the size of a walnut) onto a parchment-lined baking sheet, leaving some space between each mound for expansion.
Baking
  1. Preheat your oven to 425°F (220°C) and bake for about 20-25 minutes or until the gougères are puffed and golden brown.
Serving
  1. Remove from the oven and allow to cool slightly before serving. They are best enjoyed warm.

Notes

For best results, do not rush the egg addition; ensure the dough cools sufficiently. Experiment with flavors by adding different cheeses or herbs. Store leftovers in an airtight container in the refrigerator for up to 2 days.
