Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press this mixture into the bottom of a springform pan to form an even layer.
- Bake the crust for 10 minutes or until lightly golden and fragrant.
Making the Filling
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Gradually add the sugar, continuing to beat until well incorporated and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and sour cream until smooth.
Baking
- Pour the filling into the prepared crust and smooth the top.
- Bake in the preheated oven for 55 to 60 minutes or until the edges look set and the center has a slight jiggle.
- Once baked, turn off the oven and leave the cheesecake inside with the door slightly ajar for about an hour. After that, transfer it to the refrigerator for at least 4 hours (or overnight) to set completely.
Serving
- Before serving, dust the top with powdered sugar or grate fresh lemon zest for an added touch.
