Method
 

Preparation
  1. Peel the potatoes and cut them into thin slices, about 1/8-inch thick for even cooking.
  2. Heat a large skillet over medium heat and add the butter. Once melted, add the potato slices, seasoning with salt and pepper.
  3. Cook the potatoes slowly for about 20 minutes, stirring occasionally until they become tender and golden at the edges.
  4. Grate the Cantal cheese while the potatoes are cooking.
Cooking
  1. Once the potatoes are ready, remove the skillet from heat and sprinkle the cheese evenly over the hot potatoes.
  2. Return the skillet to low heat, allowing the cheese to melt completely without burning the bottom.
  3. For an extra crispy layer, place the skillet under the broiler for a minute or two while keeping an eye on it.
Serving
  1. Once the cheese is melted and bubbly, remove from heat and garnish with fresh parsley before serving.

Notes

Tips for the best results include parboiling the potatoes before slicing to speed up cooking, and adding sautéed garlic or bacon bits for extra flavor. Let the Truffade rest for a few minutes before slicing to help it hold its shape.
