Main Ingredients
  • 1 pound Italian sausage Use sweet or hot sausage based on your preference.
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable or chicken broth Use low-sodium if preferred.
  • 2 cans (15 ounces each) white beans, drained and rinsed Rinse to remove additional salt and starch.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 cups fresh spinach Add at the end to keep vibrant.
  • to taste Salt and pepper Adjust according to preference.
  • 1 tablespoon Olive oil For sautéing.

Method
 

Cooking
  1. In a large pot, heat olive oil over medium heat.
  2. Add Italian sausage and cook until browned.
  3. Stir in onion, carrots, and celery; cook until vegetables are tender.
  4. Add garlic and cook for another minute.
  5. Pour in the broth and bring to a boil.
  6. Add the white beans, oregano, thyme, salt, and pepper.
  7. Reduce heat and let simmer for 20-30 minutes.
  8. Add fresh spinach just before serving and stir until wilted.

Notes

Brown the sausage well for more flavor. Add a splash of lemon juice or vinegar for brightness. Store in airtight containers.
