Preparation
- In a large mixing bowl, whisk together the whole wheat flour, rye flour, salt, and instant yeast until evenly mixed.
- In a separate bowl, mix the warm water, buttermilk, and honey until combined.
- Gradually pour the wet mixture into the dry ingredients, stirring with a wooden spoon or spatula until a sticky dough forms.
- Dust a clean surface with flour and knead the dough for about 8-10 minutes until elastic but slightly sticky.
Rising
- Place the dough in a greased bowl, cover with a damp cloth and let it rise in a warm area until it doubles in size, about 1-2 hours.
- After rising, punch the dough down and fold in the mixed seeds. Shape into a loaf and place in a greased loaf pan. Cover and let rise again until it doubles, about 30-45 minutes.
Baking
- Preheat your oven to 375°F (190°C). Bake the loaf for 40-50 minutes, or until it sounds hollow when tapped on the bottom.
- For a softer crust, brush the top with melted butter immediately after baking.
Cooling
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack and wait until completely cooled before slicing.
Notes
For the best results, consider toasting the seeds before adding them to the dough. You can also add raisins or apricots for a sweeter version. Maintain a well-floured workspace to prevent sticking.
