Preparation
- Preheat your oven to 325°F (165°C).
- In a large bowl, whisk together the ground almonds, powdered sugar, and cinnamon.
- In a separate bowl, beat the egg whites until soft peaks form, then gently fold them into the dry mixture, along with the lemon juice.
- On a lightly sugared surface, roll the dough out to about 1/4 inch thick and use a star-shaped cutter to cut out the cookies.
- Transfer the cookies to a lined baking sheet and slightly press each cookie to shape it better.
Baking
- Bake for about 12-15 minutes or until the edges turn lightly golden.
- Once cooled, prepare a simple icing using powdered sugar and egg whites, then brush this over each cookie.
- Let the icing harden for about an hour before serving or storing the cookies.
Notes
Ensure your almonds are finely ground to create a smooth texture. If your dough feels too sticky, add more powdered sugar until manageable. Sprinkle some extra cinnamon on top before baking for added flavor. Store in an airtight container for up to two weeks, and they freeze well if tightly wrapped.
