Ingredients
  

For the salmon
  • 4 pieces Salmon fillets Even thickness preferred for uniform cooking
  • 1 cup Cherry tomatoes or asparagus Choose according to preference
  • 1 clove Garlic, minced
  • 1/2 piece Lemon, Zest and juice of Add more for additional flavor
  • 1 tbsp Fresh parsley, chopped Plus more for garnish if desired
  • 1 tbsp Olive oil For drizzling
  • 1 package Boursin garlic & fine herbs cheese (5.2 oz) Or substitute with other flavored soft cheeses
  • to taste Salt and black pepper Season to personal preference

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Place the salmon fillets on a baking sheet lined with parchment paper.
  3. In a bowl, mix the Boursin cheese, garlic, lemon zest, lemon juice, and parsley.
  4. Spread the cheese mixture evenly over the top of each salmon fillet.
  5. Arrange cherry tomatoes or asparagus around the salmon on the baking sheet.
  6. Drizzle olive oil over the vegetables and season everything with salt and black pepper.
Baking
  1. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  2. Serve warm.

Notes

This dish pairs well with a simple side salad or some steamed rice. For an extra touch, you can also sprinkle more fresh parsley on top before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven at low temperature.
