Preparation
- In a bowl, combine olive oil, minced garlic, lemon juice, dried thyme, oregano, salt, and black pepper to make the marinade.
- Coat the chicken breasts thoroughly with the marinade and let sit for at least 20 minutes.
Cooking
- Heat a skillet over medium-high heat and sear the marinated chicken for 5–6 minutes on each side until golden brown.
- In another pan, add butter and a splash of water. Toss in the baby carrots and cook until tender, about 10 minutes.
- Steam or sauté the green beans until crisp-tender, taking about 5 minutes.
Serving
- Arrange the chicken, sautéed carrots, and green beans on a plate. Garnish with fresh parsley and serve with lemon wedges.
Notes
For added flavor, consider adding lemon zest to the marinade. Allow the chicken to rest after cooking for better texture.
