  • 2 pieces boneless skinless chicken breasts Choose plump and blemish-free breasts for best results.
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice Freshly squeezed for best flavor.
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tbsp fresh parsley, chopped For garnish.
  • to taste Salt and black pepper
For the Vegetables
  • 2 cups baby carrots Choose fresh and vibrant carrots for best flavor.
  • 2 cups green beans, trimmed Opt for fresh and colorful beans.
  • 1 lemon cut into wedges For serving.
  • 1 tbsp butter Can be substituted with olive oil for a dairy-free version.

Method
 

Preparation
  1. In a bowl, combine olive oil, minced garlic, lemon juice, dried thyme, oregano, salt, and black pepper to make the marinade.
  2. Coat the chicken breasts thoroughly with the marinade and let sit for at least 20 minutes.
Cooking
  1. Heat a skillet over medium-high heat and sear the marinated chicken for 5–6 minutes on each side until golden brown.
  2. In another pan, add butter and a splash of water. Toss in the baby carrots and cook until tender, about 10 minutes.
  3. Steam or sauté the green beans until crisp-tender, taking about 5 minutes.
Serving
  1. Arrange the chicken, sautéed carrots, and green beans on a plate. Garnish with fresh parsley and serve with lemon wedges.

Notes

For added flavor, consider adding lemon zest to the marinade. Allow the chicken to rest after cooking for better texture.
