Preparation
- Preheat the oven to 425°F (220°C).
- Toss cut potatoes with vegetable oil, paprika, garlic powder, and salt until well coated. Spread them on a baking sheet in a single layer.
- Bake fries for about 30–35 minutes until crispy, turning halfway through.
- In a bowl, mix chopped hard-boiled eggs, cherry tomatoes, mayonnaise, Dijon mustard, chopped parsley, salt, and pepper for the egg salad.
- Brush sausages with olive oil, and sprinkle with garlic powder, paprika, and black pepper.
Cooking
- Heat the grill to medium heat and grill the sausages for about 8–10 minutes, turning occasionally until charred.
Serving
- On a large platter, arrange the grilled sausages, seasoned fries, and egg salad. Garnish with chopped parsley.
Notes
For best results, soak potatoes in cold water for at least 30 minutes before baking to achieve extra crispy fries. Leftovers can be kept in the fridge for up to three days.
