Ingredients
  

For the Sausages
  • 6 pieces smoked sausages Opt for plump, fresh sausages for the best texture.
  • 1 tbsp olive oil Used to brush the sausages before grilling.
  • 1/2 tsp garlic powder Sprinkle over sausages for flavor.
  • 1/2 tsp paprika Adds smokiness to the sausages.
  • 1/2 tsp black pepper For seasoning the sausages.
For the Fries
  • 4 large potatoes Cut into fries.
  • 2 tbsp vegetable oil Used to coat the fries.
  • 1 tsp paprika For seasoning the fries.
  • 1 tsp salt To taste for the fries.
  • 1/2 tsp garlic powder Used for extra flavor.
  • Chopped parsley For garnish.
For the Egg Salad
  • 6 pieces hard-boiled eggs Chopped.
  • 1 cup cherry tomatoes Halved.
  • 1/4 cup mayonnaise Can substitute with Greek yogurt for a lighter version.
  • 1 tbsp Dijon mustard For seasoning the egg salad.
  • 1 tbsp chopped parsley For mixing and garnish.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Toss cut potatoes with vegetable oil, paprika, garlic powder, and salt until well coated. Spread them on a baking sheet in a single layer.
  3. Bake fries for about 30–35 minutes until crispy, turning halfway through.
  4. In a bowl, mix chopped hard-boiled eggs, cherry tomatoes, mayonnaise, Dijon mustard, chopped parsley, salt, and pepper for the egg salad.
  5. Brush sausages with olive oil, and sprinkle with garlic powder, paprika, and black pepper.
Cooking
  1. Heat the grill to medium heat and grill the sausages for about 8–10 minutes, turning occasionally until charred.
Serving
  1. On a large platter, arrange the grilled sausages, seasoned fries, and egg salad. Garnish with chopped parsley.

Notes

For best results, soak potatoes in cold water for at least 30 minutes before baking to achieve extra crispy fries. Leftovers can be kept in the fridge for up to three days.
