  • 1.5 cups strawberry puree
  • 2 tsp strawberry extract
  • 3 cups cake flour
  • 2 cups sugar
  • 1 cup unsalted butter, softened
  • 5 large eggs
  • 1 cup milk
  • 2.5 tsp baking powder
  • 0.5 tsp salt

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in the strawberry puree and extract.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  10. Frost with your favorite frosting and serve.

Notes

Use ripe strawberries for the best puree and flavor. Keep the cake in an airtight container or cover with plastic wrap.
