  • 1 pound pasta Choose your preferred shape.
  • 4-6 quarts water For boiling the pasta.
  • To taste salt Water should taste like the sea.

Method
 

Cooking Pasta
  1. Fill a large pot with water and bring it to a strong boil.
  2. Add salt to the boiling water until it tastes pleasantly salty.
  3. Add the pasta and stir immediately. Stir again a minute later to prevent clumping.
  4. Start tasting the pasta 2 minutes before the box time for al dente texture.
  5. Reserve a cup of pasta water, then drain the pasta quickly without rinsing.
  6. Finish cooking the pasta in your sauce for 1 to 2 minutes, adding reserved pasta water as needed for a silky texture.

Notes

Always save pasta water; it helps to adjust sauce texture. Don’t rinse pasta unless for cold dishes, as rinsing removes starch needed for sauce adhesion.
