Ingredients
  

For the Cookies
  • 1 large Egg
  • 3/4 cup Honey
  • 2 1/2 cups All purpose flour
  • 1 tsp Baking powder
  • 1/2 cup Brown sugar, packed
  • 1 1/2 tsp Cinnamon
  • 1/2 tsp Salt
  • 1 tsp Vanilla extract
  • 1 cup Butter, unsalted Soften to room temperature
  • Flaky sea salt for topping Add right before baking

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the unsalted butter and brown sugar until light and fluffy.
  3. Add in the egg, honey, and vanilla extract, mixing until combined.
  4. In another bowl, whisk together the all-purpose flour, baking powder, cinnamon, and salt.
  5. Gradually stir the dry ingredients into the wet mixture until just combined.
  6. Scoop tablespoons of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Sprinkle flaky sea salt on top of each cookie.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve cookies at room temperature; they pair well with coffee, tea, or milk. Warm for a few seconds in the microwave for a soft bite. Store in an airtight container for up to 4 days or freeze for up to 3 months.
