Ingredients
  

For the Chicken
  • 6 pieces chicken drumsticks Look for plump, blemish-free meat.
  • 1 tbsp olive oil Moisture enhancer during baking.
  • 1 tsp paprika
  • Salt Salt & black pepper To taste.
For the Sauce
  • 2 tbsp honey Use local honey for authenticity.
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce Substitute with tamari for a gluten-free option.
  • 1 tbsp ketchup
For Serving
  • 2 cups cooked white rice
  • 1 cup lettuce, chopped Fresh and crisp.
  • 1/2 cup cucumber, sliced For added crunch.
  • 1 medium tomato, sliced
  • 1/4 medium red onion, sliced

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken drumsticks with salt, pepper, paprika, and olive oil.
Making the Sauce
  1. In a medium bowl, combine honey, minced garlic, soy sauce, and ketchup. Stir until well mixed.
Baking the Drumsticks
  1. Place the seasoned drumsticks on a baking sheet lined with parchment paper.
  2. Bake for 35–40 minutes, brushing with sauce halfway through.
Preparing the Rice and Salad
  1. Fluff your cooked rice with a fork. In a bowl, toss together the chopped lettuce, sliced cucumber, tomato, and onion.
Serving
  1. Once the chicken is cooked through and the internal temperature reaches 165°F (75°C), serve the baked drumsticks over rice and with the fresh salad on the side.

Notes

For a fantastic dining experience, pair with steamed broccoli or snap peas. Store in the fridge for up to 4 days in an airtight container.
